The project has detected the monthly safe intake of fried foods for the first time in the country, which is of great significance for guiding the public health diet.

It is understood that edible oil can be degraded by high temperature and repeated frying for a long time to produce a variety of harmful substances, posing a threat to health. In this project, the experts conducted a series of experiments to study the safety of frying foods consumed by Chinese residents daily, analyzed the oil absorption rate of the frying oil and its deterioration rules, and the sanitary status of the frying oil in the decade. A comparative analysis was carried out, and the polar component (PC) was finally selected as a new health indicator, and was included in the national standard of the Hygienic Standard for Edible Plant Frying Oil, which guides residents to form scientific health. Eating habits have positive meanings.

Tianjin experts have calculated the monthly safe eating times of various fried foods through scientific methods. Under the premise of eating one or two each time and eating only one type of fried food, the fried fritter can eat up to 17 times a month, the fried fruit can eat up to 6 times a month, and the fried gluten can be eaten up to 7 times a month. The fried nuts are eaten up to 5 times a month, and the French fries are eaten up to 8 times a month. “Because we often eat several fried foods at the same time in daily life, the actual safe intake level will drop.” Experts reminded.
