Study on the Senescence and Browning of Litchi Pericarp during Storage

The fruits of nine mature Litchi cultivars Yuanhong were harvested and preserved in 7 groups after dipping with preservatives: Group A, PE bags were stored at room temperature and stored; Group B, wet sand cloths were stored at room temperature with moisture; Group C, control (fruits) Placed in open cardboard box at room temperature); Group D, PE bags stored at room temperature for 7 days after storage; Group E, low temperature storage (91°C) plus PE bags; Group F, storage at different temperatures plus PE bags (E group storage after 27 days, Move to room temperature); Group G, remove PE bags at varying temperatures (E group removes PE bags after storage for 27 days and moves to room temperature). The effects of water content change on the structure of peel cell, content of phenols and activity of polyphenol oxidase in fruit of litchi were studied. The results showed that the brown litchi litchi was seriously dehydrated, causing the cell conductivity to increase exponentially, dehydration and aggregation of the cell protoplasm, and the structure was completely destroyed. The polyphenol oxidase activity in the pericarp decreased by more than 80%, and the phenolic content decreased by 50%. The browning fruit is the opposite. The key to preventing post-harvest fruit browning is controlling the dehydration of the peel and delaying cell senescence. The comparison of 7 storage treatments showed that the PE bag package not only had water retention effect on litchi fruit, but also had a gas-regulating effect, which had a significant effect on delaying senescence and browning of peel fruit cells.
